When Jose Aste brought Tantay to Allen Neighborhood Center’s Incubator Kitchen Program, it was one of only two Peruvian restaurants in Michigan; recently, however, the cuisine is seeing an explosion in attention worldwide. Jose believes this is because it packages familiar ingredients with innovative and dynamic flavors. Jose works to capture the flavor palate of the coast of Peru (his favorite dish is ceviche, a Peruvian delicacy that features fish cured in citrus juice), scaling up family recipes to feed and connect the people of Lansing. The aptly named Tantay (Quechua for “to join together”) is guided by its steadfast values, including a passion for fostering community and bringing people together. Jose also lists among his values providing a fair wage, and inclusivity.

Jose says being a part of the Allen Neighborhood Center Incubator Kitchen Program has given him a valuable opportunity to connect with the Lansing community, including customers, the farmers who provide his locally grown ingredients, and the mentors who guided him as he established Tantay. Beyond preparing and serving food, Tantay also hosts cooking workshops, offers some wholesale products, and Jose will even come to your home and curate a unique food experience! Tantay will be one of four Incubator Kitchen Program graduates to move into ANC’s new Accelerator Kitchen.
